AYEEMA's CHICKEN CURRY !!!







I have learnt this chicken curry from my mother.My elder son calls this Ayeema's (grandmother) chicken curry. Totally vegetarian herself, my mother makes the tastiest chicken curry !! Here comes the recipe. Enjoy ...:)




Ingredients:
Chicken -1kg
Ginger /garlic paste -2tbspn 
Tomato-1medium(sliced)
Potato-2medium(Cut into big pieces)
Garam Masala-1tbspn
Salt-To taste
Haldi (turmeric) powder-1tspn
Chilli powder-1tspn
Onion-1big(Cut into slices)
Oil-3tbspn
Tej patta (Bay leaves) -2
Water- 1.5 Cup (You can add more water if you want more gravy)
Coriander leaves -For garnishing

Method:
  1. Wash the chicken and marinate it with haldi powder and salt  for 1/2hr.
  2. Take oil in a pressure cooker , add tej patta ,onion and saute' till onion becomes golden brown. Add ginger /garlic paste and saute till the raw smell goes from the ginger/garlic.
  3. Add tomato pieces and saute till done. Add the marinated chicken pieces and saute till the chicken looks dry.
  4. Add potatoes and add 1.5cup water.Add the chilli powder, haldi powder , salt to taste.(If you have added all the haldi powder and salt while marinating the chicken then do not add anymore ).
  5. Pressure cook till the cooker whistles for the fourth time. Take the cooker off the stove and let the cooker attain normal pressure. Open the lid, add the garam masala and garnish it with coriander leaves.
  6. Serve  hot with rice or chapati/roti.

Triffle pudding






Ingredients:
Custard -2cups
Jelly -1.5 cups
Fruits-1cup(apples,banana,grapes)You can also use other fruits
Cake-1small (Sponge cake)

Method:
Prepare the custard of your choice/flavor and keep it aside.
Prepare jelly of your choice/flavor and let it set.
Cut the fruits of your choice and keep them aside.

Assembling:
  1. In a pudding bowl ,arrange the cake pieces ,over it pour the custard ,then the jelly and then fruits.
  2. Repeat the process and finally decorate the pudding with fruits and keep in the refrigerator to set for 2hours before serving.
  3. Serve cold !!

Plantain cutlet


Ingredients:
Plantains/Kaccha kela-2(boiled)
Potato-1(Boiled)
Green chillies-To taste
Mint /Pudina leaves-a few
Salt -To taste
Garam masala powder-1tspn

Method:
  1. Mix together all the ingredients in a bowl.Take a spoonful mixture in your hand and shape into cutlets.
  2. In a pan take 1tbspn of oil, heat the oil ,lower the flame and shallow fry the cutlets from both sides.When done take out all the cutlets and serve with tomato ketchup or coriander chutney.
  3. Serve hot!!!

Besan Laddoo









This is a very famous Indian sweet made  from chickpeas /besan during festivals .On the occasion of holi (festival of colors)I would like to wish all my well-wishers a very happy and safe holi .
Holi  hai !!!!!
Ingredients :
Clarified butter /Desi ghee -1cup
Chickpea flour /besan -3cups
Sugar -1.5cup(Powdered)
Cardamom powder -1tspn
Dry fruits -1.5cups(crushed)
(Cashew,pistachio,almonds )
Method :
  1. In  a pan ,melt the butter /ghee and then lower the flame to the minimum.Add the chickpea /besan flour and fry till a nice aroma comes from the chickpea /besan.
  2. The color of the besan should be golden brown after frying .Transfer the mixture to another pan and let it cool for 10 minutes .
  3. Add the powdered sugar and the dry-fruits to the mixture and mix it well with hand .Take small portions of the mixture and make small ladoos /balls.
  4. Tastes best at room temperature .You can make the laddoos and keep in air tight jars for a week .
  5. Enjoy !!!!

Butter naan



Here comes the recipe for naan which you can make in your own skillet/tawa/frying pan at home .You do not need a  tandoor to have your favorite naan!!

Ingredients:
Maida/All purpose flour-2cups
Yeast -1tbspn
Salt-To taste
Sugar-1tspn
Milk-1/2cup or
Warm water -1/4cup
Butter -To apply over the naan

Method:
  1. Take warm water and milk in a bowl,to that add yeast,salt,sugar and mix well .
  2. Leave it for 5mts.In a bowl take the maida,to that add the yeast mixture and make a soft dough. Leave it aside for 1/2hr for the dough to rise.
  3. Take a frying pan or a skillet ,heat it nicely then reduce the flame .
  4. In the mean while take a small portion of the dough and roll into the shape of chapatis and place it over the hot frying pan.
  5. Let it cook nicely from one side then turn it over to the other side.When done from both sides remove from the frying pan/skillet and apply butter on the front side.
  6. Serve hot with any curry of your choice!!!!
