Vegetable cutlet




Ingredients:
Potoato-1(Boiled)
Mixed vegetables(carrot,beans,peas)-1cup(Boiled)
Bread crumbs-1/2cup
Oil -To deep fry /Oil-3tbspn-To shallow fry
Garam masala powder-1tspn
Green chilli -1(chopped)
Pudina /mint leaves -A few
Salt -To taste 


Method:
  1. In a bowl mix together the boiled potato,green chilli,mint /pudina leaves, mixed vegetables, salt to taste and garam masala powder.
  2. Take a small portion of the mixture and form into cutlets .Roll each cutlet in the bread crumb and keep aside to set for 10mts.
For deep frying:
In a wok take oil till half and deep fry the cutlets till the cutlets turn golden brown from all the sides.(Always fry in medium heat )
Serve it hot with tomato ketchup !!


For shallow fry:
In a frying pan take 3tbspn of oil and fry the cutlets till the cutlets turn golden brown from both sides .(Always fry in medium heat)
Serve it hot with tomato ketchup !!!

Mushrrom ,bell pepper/capsicum and snow peas fry







Ingredients:
Mushroom- 1cup
Snow peas-1cup
Bell pepper/Capsicum-1/2 cup
Britannia cheese slice-1
Onion-1/2cup(Sliced)
Oil-2tbspn
Salt-To taste
Pepper powder-To taste
Coriander leaves-2tbspn

Method:
  1. In a wok heat oil ,when the oil is hot,lower the flame and add onion ,fry till brown .
  2. Add mushroom and bell pepper.Saute till half done add the snow peas and saute till all the vegetables are done. Add salt to taste , pepper powder,coriander leaves and the Britannia cheese slice.Mix well. 
  3. Serve hot !!

Dahi bada alloo dum chat





This is a chat specialty from the state of Odisha ,India .It can be served as a starter or an evening snacks .This recipe is on request of my school friend .


Dahi bada:

Ingredients:
Urad dal-1cup
Moong dal-1 Handful
Curd-200gms
Oil-For frying the badas
Water-To soak the badas

For garnishing:
Salt-To taste
Jeera/Cumin powder(Made from baked jeera)-1tsp
Chiili powder-1tsp


Method:
  1. Soak urad dal and moong dal in enough water overnight.Grind the dal to a fine paste with a little water and set aside for 4-5hrs .Let the batter get a bit fermented.(This will make the badas soft and spongy)
  2. Add a little bit of salt to the batter.Put enough oil in the kadhai so that the badas can be fried properly .Let the oil heat nicely, then lower the flame and  make small badas (dumplings) with the batter. When done take them out and put them in  water for 15-20mts. Take out the badas from the water and squeeze out the excess water pressing badas between the palms.
  3. Blend the curd in a blender or a hand whisker adding a little bit of salt and chilli powder to it.Put 1/2 cup water to make the curd a little watery ,it should not be thick. Now over the badas put the curd and leave it for 2mts for the badas to soak in the curd nicely.
  4. Garnish the dahi badas with a little bit of salt,chilli powder and jeera powder .
  5. Keep it aside .


Alloo Dum :

Ingredients:
Potato-1/2 kg(Boiled)
Onion-1medium(Chopped)
Tomato-1medium(Chopped)
Green chillies -1(Chopped)
Ginger/garlic paste-1/2tspn
Oil-1tbspn 
Salt-To taste
Turmeric powder-1tspn
Water-1cup
Coriander leaves -for garnishing 
Chopped onion-for garnishing


Method:
  1. Heat oil in a wok and add chopped onion and saute till brown.
  2. Add green chillies ,ginger/garlic paste and saute till the raw smell of ginger /garlic vanishes.
  3. Add the chopped tomatoes and fry till done.Add the boiled potato to the done masala.Add salt to taste,turmeric powder and mix well.Add water to the curry and let it boil .When the gravy thickens,switch off the stove.
  4. When done keep it aside.


Assembling of dahi bada alloo dum chat:

In a plate arrange 2 dahi badas.Now place the alloo dum by the side of the dahi badas.Sprinkle a little salt,chilli powder and jeera powder over the badas .Garnish it with coriander leaves and chopped onion .
Now it is ready to serve !!!

Moong dal halwa




This is a traditional recipe of Rajasthan an Indian state.The specialty of this recipe is the liberal use of ghee (clarified butter). This halwa is made from lentils and the taste is just fabulous !!!


Ingredients:

Moong dal(Yellow split dal/lentils)-1cup

Sugar-1 1/3cup

Ghee-1/2cup

Milk -1cup

Water -1cup

For garnishing -

Saffron -A few strings soaked in warm milk

Almonds sliced


Method:

  1. Soak the moong dal in enough water for 6-7hrs .Then grind it to a coarse paste.
  2. In a pan heat the ghee ,lower the flame,add the moong dal paste,fry till brown .
  3. Add milk ,sugar and mix well .When the side of the pan starts to leave the ghee and a nice smell comes from the halwa ,the halwa is ready.
  4. Garnish the halwa with sliced almonds and saffron .
  5. Serve it hot !!
